Homemade Pumpkin Spice Latte

Do I dare say it?! I am a complete and total sucker for all things fall, including a good, ol' PSL (Pumpkin Spice Latte for those not in the know)!

The Arizona temps are still soaring above 100 degrees every day, but no matter the temperature, I've got to have one good, hot cup of coffee in the morning. Lately, I've been drinking it black, but I've experimented with all kinds of creamers, milk, milk substitutes, butter, MCT oil, just about everything you could have imagined.

My latest experiment, has to be the best coffee I have made yet! Not only was it easy enough to make while I was still half asleep and wishing I was under my warm blankets again, but it is also relatively healthy compared to those creamers we buy at the store. I like knowing what is in my food and drinks so this Pumpkin Spice Latte checked all the boxes for me. (Bonus - you can control how sweet you want it, so if you're anything like me, you can tone it down from those Starbucks originals!!)

Okay let's get to work....

Ingredients

  • 1 cup of milk (I am experimenting with raw milk this week, so far I love it! I do have to watch my dairy intake though so you could totally make with Macadamia, coconut, or almond milk!

  • 3/4 cup of strong brewed coffee (since you're using more milk than coffee you want to use extremely strong coffee, or maybe even some instant coffee)

  • 1.5 tbsp of pumpkin puree

  • 1/4 tsp of pumpkin spice

  • 1/2 tsp of cinnamon (I tend to go over board on cinnamon so you can always back it off a little)

  • 1-2 tbsp maple syrup (here is where you can control the sweetness of your new fave latte)

Directions

  1. Combine milk and pumpkin puree in a microwave safe bowl. Stir until well combined and then microwave 1.5 to 2 minutes or until very hot.

  2. Add pumpkin spice, cinnamon, and maple syrup to milk mixture. Use a frother (or if you, like me, don't have one, use a hand mixer or any kind of utensil to combine spices and get the milk nice and frothy.

  3. Pour your milk mixture into your steaming hot cup of coffee. Top with a little extra pumpkin spice.

  4. Kick you feet up and grab your bible, a good book, or a great friend for some conversation and enjoy!
