Garlic Brown Butter Seared Scallops and Veggies


Okay, okay, I know the name sounds intimidating and it may seem like a lot of work, but I am here to tell you this delicious meal can be done in under 30 minutes!


Browned butter has been my new favorite thing since the first time I tried it. This butter sauce has a sweet, nutty flavor to it and makes any dish seem extra fancy. You can even use browned butter in cookies recipes... Sooo good!

Ingredients

- 1 lb scallops (if frozen, be sure to thaw ahead of time)

- 1 bunch of asparagus, cleaned and chopped

- 1 zucchini, cleaned and diced into large chunks

- 1 red bell pepper, diced

- splash of oil (I prefer walnut, but you can use whatever you like)

- 3 tbsp butter

- minced garlic to your liking

- salt and pepper to taste


Directions

1. Add a splash of oil and chopped veggies to a large fry pan. I used just a touch of salt and pepper on the veggies. Saute over medium heat until veggies are cooked.

2. In a separate pan, melt butter over medium to high heat. Now you'll want to keep a close eye one your butter or it can end up burned real quick. Once butter is melted, continuously stir while its starting to turn brown. You'll start to notice brown flake and it will begin to smell heavenly! Once the butter is almost browned, add your minced garlic.

3. Add the scallops to the butter sauce and sear about 2-3 minutes per side or until they are opaque and cooked through.

4. Pour the scallops and butter sauce over your veggies and lightly stir to mix it all together.

5. Enjoy!
